Each portion of fish is brined for 12 hours and then smoked at low heat for 8 hours. Our smoked fish is in  roughly 8oz portions, vacuum sealed and frozen. Pull it out and let it thaw in the refrigerator and enjoy without cooking! Makes amazing salmon spread, or just a quick healthy snack.
